Accessories/Games for 7 Year Old

Looking for must have accessories for a 7 year old girl who will be getting her first Nintendo switch for Christmas. Recommendations of which Switch to get (OLED? Original?), games that are appropriate, and 'must have' accessories. She loves animals, Pokémon , and Mario. Likely will not be playing Zelda, or any of the likes. She recently became obsessed with playing video games on her tablet. Mostly likes Barbie games so she can do makeup/style hair, simple racing games and anything with cats/unicorns!
