What am I doing wrong?

For context, I’ve baked with my starter several times and my loaves have come out beautifully and I never struggled with my dough; great crumb, rise, color, the whole shebang. I stuck the starter jar in the fridge for about a week, baked with it again and dough is sticky after my stretch and folds and BF and doesn’t pull away from the bowl. I’m following the same recipe as I had before and I can’t figure out what I’m doing wrong. Recipe: 150 g active starter 350 g filtered water 500 g King Arthur 11.7% flour 20 g salt Mix together water and starter until milky. Add salt and flour and mix until combined. Let it sit 30 minutes. Start series of stretch and folds with an hour between and BF with aliquot method.

TLDR; sticky dough after stretch and folds and BF. Suggestions?
