What is this?

I stripped my pan and washed it until wiping it yielded no black on the paper towel, then started the stovetop seasoning.

I’ve been wiping it every few minutes in case of excess oil and it keeps throwing off this brown color, which was not coming off when I was washing.

Normal? Safe?
