Why are grapefruits more sour than Pomelo when they’re a hybrid of Pomelo and Sweet Oranges?

Have Pomelos been selectively bred for sweetness since the grapefruit was created? Why else would a cross between a Pomelo and an even sweeter citrus fruit be more bitter/less sweet than either one of its parent fruits?
